Sauteed Spinach Tofu |
Here is another super quick fix lunch or dinner for today's busy lives trying to eat healthy. What you see in the picture are the only ingredients used - Spinach, Garlic, Tofu. The benefits of all 3 ingredients is well known.
1lb baby spinach
1 tsp olive oil
2 tsp garlic, chopped
salt n pepper
tofu, half pkg (firm or extra firm)
- Heat olive oil in a pan and add garlic. Saute for a minute to flavor the oil.
- Add baby spinach and cover. Cook for 2-3 min. Plate the sauteed spinach.
- In the same pan, spray some non stick cooking spray.
- Cut and place tofu. Let it sear on each side for 2 min to get the nice golden color.
- Place over the spinach.
