Garlic Sauteed Spinach Tofu

Sauteed Spinach Tofu
 Running short on time is never a good enough excuse to reach out for pre packaged foods. There are thousands of tasty healthy recipes that can be prepared in under 10 min.  

Here is another super quick fix lunch or dinner for today's busy lives trying to eat healthy. What you see in the picture are the only ingredients used - Spinach, Garlic, Tofu. The benefits of all 3 ingredients is well known.

1lb baby spinach
1 tsp olive oil
2 tsp garlic, chopped
salt n pepper
tofu, half pkg (firm or extra firm)
  •  Heat olive oil in a pan and add garlic. Saute for a minute to flavor the oil.
  • Add baby spinach and cover. Cook for 2-3 min. Plate the sauteed spinach.
  • In the same pan, spray some non stick cooking spray. 
  • Cut and place tofu. Let it sear on each side for 2 min to get the nice golden color.
  • Place over the spinach.
