Tofu Mushroom Pepper Curry

Yesterday was a fridge cleanup night and I had to use up Tofu, Mushrooms and Green Peppers. Last few nights were non-Indian dinners so was craving for traditional Indian home food. I eat tofu in many Indian recipes but honestly, not tastefully. So wanted to try something new. Amazingly it turned out great and now would be my go-to tofu Indian recipe.

Before I forget what I did, wanted to capture it in the blog.




Recipe

1/2 packet diced tofu
1 diced green pepper
1 diced onion
1 packet diced mushrooms
1 tsp seaseme seeds
1 tsp whole black pepper
1/4 cup cashews or peanuts
1 tsp coriander powder
1 tsp cumin powder
1tsp cardamom powder
2-3 tsp oil for cooking

Method

  • Dice and toast the tofu in oven or grill.
  • Heat the oil in a pan and saute onion, green pepper. Cover and let simmer on low for veggies to soften.
  • Meanwhile, dry roast seaseme seeds, black pepper, cashews/peanuts. Grind in a chunky powder.
  • Getting back to your pan add mushroom and tofu.
  • Now add the cashews or peanut powder you prepared, coriander powder, cumin powder. Mix thoroughly
  • Cover and let simmer for just few minutes.
  • Uncover and add cardamom powder to garnish.
Enjoy with hot Naan bread or just like that too. Happy Cooking!
