This capsicum rice recipe is exploding with color, aroma and flavors. I first had it at work in an office potluck and fell in love. Basmati rice is high in carbs and folks watching their carbs might stay away from rice. But if you really wanna have it sometime, such tasty preparation makes a small portion too very satisfying...giving you the best of both worlds.
Knowing about your food is very important. Foods are not only about carbs, sugar, fat, fiber and protein. Though most of basmati rice calories come from carbs, just one cup of cooked basmati provides 88% of daily value of manganese - an important nutrient essential for the metabolism of protein and carbohydrates and regulating your nervous system. So actually a cup of rice might help if you have been on a high protein diet.
Capsicum rice is best made with a day old rice. And the special dry powder made for garnishing is the one that adds all the flavor.
Recipe
3 cups boiled rice (day old works best)
1 red bell pepper
1 yellow bell pepper
1 green bell pepper
Dry roast in microwave and grind the following ingredients
1 tsp black/brown mustard seeds
1 tsp cumin seeds
7-9 curry leaves
1 tsp coriander seeds
2-3 Tbsp peanuts
1/2 inch cinnamon stick
1-3 dry red chillies
1/4 tsp Garam Masala
salt to taste
- In a pan heat 1/2 -1 tsp of oil and saute all bell peppers. I cut mine lengthwise.
- Now add the rice.
- Top up with the dry roasted powder and mix well without breaking the rice.
- Cover and let simmer on medium low for 5 min
