Peanut butter has been a pantry staple for years. But all varieties of nut butter are the"in-thing" in grocery stores pantry aisles now. I always wanted to buy a jar of nut butter but the ingredient list always threw me off. Most store bought nut butters have "hydrogenated oils". Many have added salt and sugar. A bottle of nut butter should only have nuts in the ingredients list. There are quite many organic options which stick to the roots to produce real good stuff. But they can be very pricey. The rule of thumb for adding nut butter to your diet is NOT more than 2 Tbsp per day. As the consumption is so less, I would hate to see a pricey bottle of nut butter go bad overtime. Also, never go for reduced fat label. Turn the bottle and check what all extra items has the manufacturer put in to replace the actual good fat. Other than protein nut butters are high in good fat. Do not let them go. So well, either the bad ingredient list or the high price kept me away from nut butter for long. Then past weekend, I tasted organic almond butter at a friend's. That stuff was addictive. I came back home and looked at my Vitamix. And rest is history.
You do not necessarily need Vitamix grade machine for making nut butter. It can be done in a regular food processor. It will only be more time taking and the texture might be less smooth. But it is still better than anything store bought. Put good in and get good out. Keeping simple things simple is the most beautiful thing.
This time I made mixed nut butter with roasted peanuts, cashews and almonds.
1/4 cup roasted peanuts(no salt or sugar added)
1/4 cup raw cashews
1/2 cup roasted almonds(no salt or sugar added)
** if you like me and are going to roast the nuts at home, let them cool to room temperature.
Throw in all the nuts together in the food processor/Vitamix. Start from low and move to the highest speed. Let it run until you get the texture you desire. In Vitamix for the above quantity it took 45 secs!
